It’s Summer time and this simple salad won summer eating! This is a quick chop and serve salad that’s so simple, but will impress everyone! Perfect for taking it with you for lunch or serving at this weekends pool party.
1/2 Watermelon, cubed
1 QT Cherry Tomatoes, cut in half or heirloom tomatoes, cut into chunks
1 Red Onion, sliced
1 handful Mint Leaves
Drizzle of Balsamic Glaze or (if you’re fancy) an Aceto Balsalmico di Modena IGP, to taste. The original thing, a little bit goes a long way!
Drizzle of Extra virgin olive oil
Sea Salt & Cracked Pepper
- Toss watermelon, cherry tomatoes, and onion in a bowl
- Spoon the salad on a serving platter and drizzle balsamic and olive oil on the salad
- Season with salt and pepper to your taste and top the salad with fresh mint leaves
- Serve to all your favorite people!
