It’s Summer time and this simple salad won summer eating! This is a quick chop and serve salad that’s so simple, but will impress everyone! Perfect for taking it with you for lunch or serving at this weekends pool party.

1/2 Watermelon, cubed

1 QT Cherry Tomatoes, cut in half or heirloom tomatoes, cut into chunks

1 Red Onion, sliced

1 handful Mint Leaves

Drizzle of Balsamic Glaze or (if you’re fancy) an Aceto Balsalmico di Modena IGP, to taste. The original thing, a little bit goes a long way!

Drizzle of Extra virgin olive oil

Sea Salt & Cracked Pepper

  1. Toss watermelon, cherry tomatoes, and onion in a bowl
  2. Spoon the salad on a serving platter and drizzle balsamic and olive oil on the salad
  3. Season with salt and pepper to your taste and top the salad with fresh mint leaves
  4. Serve to all your favorite people!
