
I wanted to make a recipe that uses the broccoli stems from the broccoli head, which we all have thrown away in the past. I also love a hash because it’s so easy to cook that Joe Shmo can cook it and it’s good for breakfast with an egg, lunch by itself, or your protein of choice for dinner. I recommend chicken sausage with it!
1 Broccoli head stem, diced into 1/2 inch pieces
5 Small potatoes, diced into 1/2 inch pieces
1 Medium onion, diced
2 Cups of peppers, can be sweet, spicy, or mixed, depends on how you like it!
2-3 Cloves of garlice
4 stems worth of thyme leaves
Salt & Pepper
3 TBSP Olive oil
Protein of choice (optional)
- Preheat oven to 425 degrees F.
- In a bowl toss broccoli, potatoes, onion, peppers, garlic, salt, pepper, and olive oil together. Put all ingredients on a sheetpan and in the oven once the oven is heated.
- Roast for 20 minutes, flip over all ingredients, and roast for 20 more minutes.
- Once it’s done cooking put in your favorite serving dish and garnish with a fresh thyme.
- Serve for breakfast, brunch, lunch, or dinner to your favorite people. I promise that people will be asking where you got this recipe!
